ABOUT THIS RECIPE:
This dish is colorful and tasty. It’s packed with ground turkey, juicy veggies, and creamy Juanita’s Hominy, all bathed in a zesty tomatillo sauce. Top it with crumbled Cotija cheese and fresh avocado for a tastebud adventure in every bite!
INGREDIENTS:
- 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained
- 16 oz. ground turkey meat
- All-purpose seasoning (to taste)
- 3 tbsp. safflower oil
- 1/2 onion, minced
- 1 carrot, minced
- 1 jalapeño, minced
- 2 garlic cloves, minced
For the Salsa Verde:
- 15 tomatillos milperos
- 1/4 white onion
- 1 serrano pepper
- 1 jalapeño
- 2 garlic cloves
- 1 bunch cilantro
- 2 tbsp. powdered chicken broth
- 1 1/2 cups water
STEP BY STEP:
- Cook the tomatillos and serrano chili in a pot of water until tender.
- Once cooked, blend them with the onion, jalapeño, garlic cloves, cilantro, powdered chicken broth, and water to make the salsa verde.
- In a pot with a little oil, fry the turkey meat. Once it is sautéed, add the minced onions, carrots, and jalapeños. When the onions are translucent, add the Hominy and garlic, and mix well.
- Add the green sauce and bring it to a boil. Then reduce the heat and cook on low for 20 minutes.
