Hominy & Nopales Chile Colorado

ABOUT THIS RECIPE:

This recipe is a vibrant blend of tender nopales cactus, Juanita’s Hominy, and a smoky chile colorado sauce. It’s the perfect way to add a little spice to your morning! Healthy and delicious all on one plate.

INGREDIENTS:

  • 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained
  • 6 guajillo chiles
  • 3 garlic cloves
  • 1/2 white onion
  • 1 pinch oregano
  • 1 pinch cumin
  • 32 oz. cactus
  • Salt and pepper (to taste)

STEP BY STEP:

  1. Rinse and drain Juanita’s Hominy.
  2. Place the chiles in boiling water and cook for 5 minutes.
  3. Blend the hydrated chiles with garlic, oregano, cumin, and onion, along with 1 tablespoon of the cooking water.
  4. In a pot with a little oil, fry the cactus (nopales).
  5. Add the drained Hominy and mix well, then pour in the strained chili mixture. Bring to a boil.
  6. Season with salt and pepper to taste. Allow the sauce to thicken slightly, adjusting the salt as needed.
  7. Serve with your favorite side and enjoy!
