ABOUT THIS RECIPE:
This recipe is a vibrant blend of tender nopales cactus, Juanita’s Hominy, and a smoky chile colorado sauce. It’s the perfect way to add a little spice to your morning! Healthy and delicious all on one plate.
INGREDIENTS:
- 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained
- 6 guajillo chiles
- 3 garlic cloves
- 1/2 white onion
- 1 pinch oregano
- 1 pinch cumin
- 32 oz. cactus
- Salt and pepper (to taste)
STEP BY STEP:
- Rinse and drain Juanita’s Hominy.
- Place the chiles in boiling water and cook for 5 minutes.
- Blend the hydrated chiles with garlic, oregano, cumin, and onion, along with 1 tablespoon of the cooking water.
- In a pot with a little oil, fry the cactus (nopales).
- Add the drained Hominy and mix well, then pour in the strained chili mixture. Bring to a boil.
- Season with salt and pepper to taste. Allow the sauce to thicken slightly, adjusting the salt as needed.
- Serve with your favorite side and enjoy!
