Tortas de Hominy y Carne Asada

1 taza de Hominy de Juanita’s, ligeramente dorado (freidora de aire)
4 aguacates
2 tomates, en cubos
1 cebolla, picada
Sal (al gusto)
1 taza de cilantro, picado
Jugo de 2 limones
2 lb. de carne de res
Sal y pimienta (al gusto)
3 bolillos o teleras
1 cda. de mayonesa
1/2 lechuga, picada
2 tomates, en rodajas
1/2 cebolla, en rodajas
Queso Oaxaca, deshebrado (al gusto)

1. Corta las teleras (o bolillos) por la mitad y unta mayonesa en cada mitad.
2. Sazona la carne con sal y pimienta, y cocínala en una sartén. Córtala en cubos y reserva.
3. Rebana los tomates, la cebolla y la lechuga. Ten listos los chiles en vinagre.
4. Prepara el guacamole mezclando los aguacates, la cebolla, el tomate, el cilantro y el jugo de dos limones. Añade el Hominy dorado y mezcla bien.
5. En una sartén, derrite el queso Oaxaca. Cuando comience a derretirse, coloca una mitad del pan encima y dóralo.
6. Retira el pan del fuego y arma las tortas agregando el guacamole, la carne, lechuga, tomate, cebolla y chiles.

Hominy & Potato Tacos

1 can (25 oz.) Juanita’s Hominy, rinsed and drained
4 white potatoes, peeled
1/4 white onion, chopped
1/2 clove garlic, minced
2 tbsp. butter
1 cup melting cheese
1/2 cup cilantro, chopped
Salt and pepper (to taste)
Corn tortillas
Oil for frying
Fresh cheese, grated
Mexican crema for serving
Sauce

1. Boil the potatoes in salted water for 10-12 mins. until tender.
2. In a frying pan, add butter, garlic, and onion. Cook until the onion is transparent, then remove from the heat and set aside.
3. Add the cooked potatoes to a large bowl, season with salt and pepper, and mash together. Add the onion and garlic mixture, shredded cheese, chopped cilantro, and Hominy, mixing well to combine.
4. Steam the corn tortillas in the microwave and spread the mixture on one half of each tortilla, then fold in half.
5. Heat oil in a frying pan, enough to cover the bottom of the pan.
6. When the oil is hot, add the assembled tacos and fry for 2-3 mins. per side, or until golden brown.
7. Remove from the oil and place on a plate lined with paper towels to soak up excess oil.
8. Serve the tacos with grated cheese, your favorite salsa, crema, and queso fresco.

Guajillo sauce

3. In a pot with oil, sauté the sliced onion until it becomes translucent. Add the ground beef and cook until browned. Add salt to taste.

5. Blend the hominy until smooth and add to the pot, along with the beans. Mix very well and leave over medium heat until the meat is cooked.
6. Let the chili simmer for a few minutes to allow the flavors to meld.

Peel of 1 lemon
1/2 cup raisins
Cinnamon powder (to taste)

1. Wash and drain Juanita’s Hominy.
2. In a pot, add the water and cinnamon stick. When the water boils, add the liter of milk and Juanita’s Hominy. Bring to a boil.
3. Once it comes to a boil, add the condensed milk and mix very well to ensure it dissolves completely and does not stick to the bottom of the pot.
4. Add the raisins and lemon peel.
5. Lower the heat and let it simmer until it thickens slightly.
6. When ready, pour it into a container and let it cool.
7. When serving, sprinkle with cinnamon powder.

150 grs. de queso, rallado
Tortillas de harina

1. En una olla, calienta la manteca (o aceite). Agrega la cebolla picada y cocina hasta que se vuelva transparente. Luego añade los frijoles y el Hominy de Juanita, mezclando bien.
2. Añade los pimientos rojo y amarillo picados y mezcla.
3. Sazona con sal y pimienta, luego agrega el cilantro picado.
4. En un comal, calienta una tortilla de harina y agrega el queso rallado. Cuando el queso se derrita, dobla la tortilla por la mitad.

Hominy Green Revoltijo

Revoltijo Ingredients:

1 can of Juanita's Hominy
16 oz of ground turkey meat
All purpose seasoning to taste
3 tbsps of safflower oil
1/2 minced onion
1 minced carrot
1 minced jalapeño
2 minced garlic cloves

Salsa Verde Ingredients:

15 tomatillos milperos
1/4 white onion
1 serrano
1 jalapeño
2 garlic cloves
1 bunch of cilantro
2 tablespoons of powdered chicken broth.
1 1/2 cups water

Cotija cheese
1 sliced avocado

PROCEDURE:
1. Blend salsa verde vegetables.
3. In a pot with a little oil, fry the turkey meat. Once it is sautéed; add onions, carrots and jalapeños. Once onions are translucent; add hominy and garlic and mix.
4. Add the green sauce and let it come to a boil then cook on low for 20 minutes

Hominy Green Revoltijo

Revoltijo Ingredients:

1 can of Juanita`s Hominy
16 oz of ground turkey meat
All purpose seasoning to taste
3 tbsps of safflower oil
1/2 minced onion
1 minced carrot
1 minced jalapeño
2 minced garlic cloves

Salsa Verde Ingredients:

15 tomatillos milperos
1/4 white onion
1 serrano
1 jalapeño
2 garlic cloves
1 bunch of cilantro
2 tablespoons of powdered chicken broth.
1 1/2 cups water

Cotija cheese
1 sliced avocado

PROCEDURE:
1. Blend salsa verde vegetables.
3. In a pot with a little oil, fry the turkey meat. Once it is sautéed; add onions, carrots and jalapeños. Once onions are translucent; add hominy and garlic and mix.
4. Add the green sauce and let it come to a boil then cook on low for 20 minutes

4. Vierte la mezcla de la licuadora sobre el caramelo en el molde.
5. Haz el flan mezclando leche condensada, evaporada, media crema, vainilla, queso crema y huevos en la licuadora.
6. Vierte el flan sobre la mezcla de pastel en el molde y cúbrelo con papel aluminio.
7. Hornea en baño María durante 1 hora y 40 minutos.
8. Deja que se enfríe antes de desmoldarlo.

4 aguacates
2 tomates, en cubos
1 cebolla, picada
Sal (al gusto)
1 taza de cilantro, picado
Jugo de 2 limones
2 lb. de carne de res
Sal y pimienta (al gusto)
3 bolillos o teleras
1 cda. de mayonesa
1/2 lechuga, picada
2 tomates, en rodajas
1/2 cebolla, en rodajas
Queso Oaxaca, deshebrado (al gusto)

1. Corta las teleras (o bolillos) por la mitad y unta mayonesa en cada mitad.
2. Sazona la carne con sal y pimienta, y cocínala en una sartén. Córtala en cubos y reserva.
3. Rebana los tomates, la cebolla y la lechuga. Ten listos los chiles en vinagre.
4. Prepara el guacamole mezclando los aguacates, la cebolla, el tomate, el cilantro y el jugo de dos limones. Añade el Hominy dorado y mezcla bien.
5. En una sartén, derrite el queso Oaxaca. Cuando comience a derretirse, coloca una mitad del pan encima y dóralo.
6. Retira el pan del fuego y arma las tortas agregando el guacamole, la carne, lechuga, tomate, cebolla y chiles.

4 white potatoes, peeled
1/4 white onion, chopped
1/2 clove garlic, minced
2 tbsp. butter
1 cup melting cheese
1/2 cup cilantro, chopped
Salt and pepper (to taste)
Corn tortillas
Oil for frying
Fresh cheese, grated
Mexican crema for serving
Sauce

1. Boil the potatoes in salted water for 10-12 mins. until tender.
2. In a frying pan, add butter, garlic, and onion. Cook until the onion is transparent, then remove from the heat and set aside.
3. Add the cooked potatoes to a large bowl, season with salt and pepper, and mash together. Add the onion and garlic mixture, shredded cheese, chopped cilantro, and Hominy, mixing well to combine.
4. Steam the corn tortillas in the microwave and spread the mixture on one half of each tortilla, then fold in half.
5. Heat oil in a frying pan, enough to cover the bottom of the pan.
6. When the oil is hot, add the assembled tacos and fry for 2-3 mins. per side, or until golden brown.
7. Remove from the oil and place on a plate lined with paper towels to soak up excess oil.
8. Serve the tacos with grated cheese, your favorite salsa, crema, and queso fresco.

1 can (25 oz.) Juanita’s Hominy, drained
1 cup condensed milk
1 liter whole milk (or lactose-free)
1/2 cup water
1 cinnamon stick
Peel of 1 lemon
1/2 cup raisins

1. Wash and drain Juanita’s Hominy.
2. In a pot, add the water and cinnamon stick. When the water boils, add the liter of milk and Juanita’s Hominy. Bring to a boil.
3. Once it comes to a boil, add the condensed milk and mix very well to ensure it dissolves completely and does not stick to the bottom of the pot.
4. Add the raisins and lemon peel.
5. Lower the heat and let it simmer until it thickens slightly.
6. When ready, pour it into a container and let it cool.
7. When serving, sprinkle with cinnamon powder.

150 grs. de queso, rallado
Tortillas de harina

1. En una olla, calienta la manteca (o aceite). Agrega la cebolla picada y cocina hasta que se vuelva transparente. Luego añade los frijoles y el Hominy de Juanita, mezclando bien.

Revoltijo Ingredients:

16 oz of ground turkey meat
All purpose seasoning to taste
3 tbsps of safflower oil
1/2 minced onion
1 minced carrot
1 minced jalapeño
2 minced garlic cloves

Salsa Verde Ingredients:

15 tomatillos milperos

1 serrano
1 jalapeño
2 garlic cloves
1 bunch of cilantro
2 tablespoons of powdered chicken broth.
1 1/2 cups water

Cotija cheese
1 sliced avocado

PROCEDURE:
1. Blend salsa verde vegetables.
3. In a pot with a little oil, fry the turkey meat. Once it is sautéed; add onions, carrots and jalapeños. Once onions are translucent; add hominy and garlic and mix.
4. Add the green sauce and let it come to a boil then cook on low for 20 minutes
5. It can be served on a base of white or Mexican rice.
6. Sprinkle with the cotija cheese and put the avocado slices on top.

3 garlic cloves
1/2 white onion
1 pinch oregano
1 pinch cumin
32 oz. cactus
Salt and pepper (to taste)

1. Rinse and drain Juanita’s Hominy.
2. Place the chiles in boiling water and cook for 5 minutes.
3. Blend the hydrated chiles with garlic, oregano, cumin, and onion, along with 1 tablespoon of the cooking water.
4. In a pot with a little oil, fry the cactus (nopales).
5. Add the drained Hominy and mix well, then pour in the strained chili mixture. Bring to a boil.
6. Season with salt and pepper to taste. Allow the sauce to thicken slightly, adjusting the salt as needed.
7. Serve with your favorite side and enjoy!

Hominy Fresaflan

Para el Pastel:
1 taza de Hominy de Juanita's, enjuagado

450 grs. de harina
1 cda. de polvo de hornear
1/2 taza de azúcar
1 taza de leche entera
4 huevos medianos
1/2 taza de mantequilla a temperatura ambiente
Colorante alimentario rosa

Para el Flan:
1 lata de leche condensada
1 lata de leche evaporada
1 lata de media crema
1 cdta. de esencia de vainilla
1 barra de queso crema
4 huevos
1 taza de azúcar

1. Precalienta el horno a 350°F (175°C).
2. Mezcla harina, polvo de hornear, Hominy, 4 huevos, azúcar, leche, aceite y colorante en una licuadora.
3. Derrite azúcar en una sartén para hacer caramelo y viértelo en un molde para hornear.
4. Vierte la mezcla de la licuadora sobre el caramelo en el molde.
5. Haz el flan mezclando leche condensada, evaporada, media crema, vainilla, queso crema y huevos en la licuadora.
6. Vierte el flan sobre la mezcla de pastel en el molde y cúbrelo con papel aluminio.
7. Hornea en baño María durante 1 hora y 40 minutos.
8. Deja que se enfríe antes de desmoldarlo.

2 Yukon gold potatoes
2 bay leaves

For the Chile Rojo:
2 tbsp. vegetal oil
4 ancho chiles, stems and seeds removed
6-8 guajillo chiles, stems and seeds removed
5 chiles de arbol (optional)
½ white onion
8 small tomatillos
2 Roma tomatoes
4 garlic cloves
4 cups water

1. Fry dried chiles briefly, then set aside.
2. Cook onion, tomatillos, and tomatoes for 5-6 minutes.
3. Add garlic, and cook for 2 more minutes.
4. Return chiles to the pan, add water, and boil to rehydrate chiles for 10-15 minutes.
5. Cool the mixture, then blend until smooth.
6. Sauté diced pork until browned.
7. Add spices, onion, potatoes, and Hominy; cook for 5-7 minutes.
8. Pour in chile sauce, add water, and bay leaves.
9. Mix, cover, and cook for 12-15 minutes on low heat.
10. Adjust salt to taste.

Buttery Hominy Japaleño Tacos

1 can (25 oz.) Juanita’s Hominy
2 tbsp. butter
1 tbsp. olive oil
1 serrano pepper, diced
¼ red onion, diced
Salt (to taste)
Tortillas

1. Rinse and drain the Juanita’s Hominy.
2. Heat a skillet over medium heat, then add the butter and olive oil.
3. Once the butter has melted, toss in the diced onion and serrano pepper.
4. Sauté until the onion turns translucent.
5. Incorporate the rinsed and drained Juanita’s Hominy into the skillet, and continue sautéing.
6. Season with salt to taste.
7. Serve in tacos and enjoy!
