  • 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, rinsed and drained
  • 4 white potatoes, peeled
  • 1/4 white onion, chopped
  • 1/2 clove garlic, minced
  • 2 tbsp. butter
  • 1 cup melting cheese
  • 1/2 cup cilantro, chopped
  • Salt and pepper (to taste)
  • Corn tortillas
  • Oil for frying
  • Fresh cheese, grated
  • Mexican crema for serving
  • Sauce

  1.  Boil the potatoes in salted water for 10-12 minutes until tender.
  2. In a frying pan, add the butter, garlic, and onion. Cook until the onion is transparent, then remove from the heat and set aside.
  3. Add the cooked potatoes to a large bowl, season with salt and pepper, and mash together. Add the onion and garlic mixture, shredded cheese, chopped cilantro, and Juanita’s Hominy, mixing well to combine.
  4. Steam the corn tortillas in the microwave and spread the mixture on one half of each tortilla, then fold in half.
  5. Heat oil in a frying pan over medium heat, enough to cover the bottom of the pan.
  6. When the oil is hot, add the assembled tacos and fry for 2-3 minutes per side, or until golden brown.
  7. Remove from the oil and place on a plate lined with paper towels to soak up excess oil.
  8. Serve the tacos with grated cheese, your favorite salsa, crema, and queso fresco. Enjoy!
