Hominy & Black Bean Quesadillas

ABOUT THIS RECIPE:

Putting Juanita’s plump Hominy, succulent black beans, and melty cheese all between two tortillas is guaranteed to bring you a mouthful of flavor. Simple? Yes. Boring? Never! Try it for yourself and let us know what you think!

INGREDIENTS:

  • 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, rinsed and drained
  • 1 tbsp. lard (or vegetable oil)
  • 1/2 white onion, chopped
  • 2 cups black beans
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 bunch cilantro, chopped
  • 150 grams cheese, grated
  • Flour tortillas

STEP BY STEP:

  1. In a pot, heat the lard (or oil). Add the chopped onion and cook until it becomes transparent. Then add the beans and Juanita’s Hominy, mixing well.
  2. Add the chopped red and yellow peppers and mix.
  3. Season with salt and pepper, then add the chopped cilantro.
  4. On a comal, heat a flour tortilla and add the grated cheese. When the cheese melts, fold the tortilla in half.
  5. Remove from heat and fill the tortilla with the hominy and bean mixture.
  6. Serve with the sauce of your choice.
