ABOUT THIS RECIPE:
Nothing like a torta to make you feel like you’re back in Mexico! This Hominy Carne Asada Torta is the real deal. Marinated steak gets the smoky treatment, complemented with delicious, creamy guacamole, Juanita’s Hominy, and fresh veggies. Who says tortas can’t be fun?
INGREDIENTS:
For the guacamole:
- 1 cup Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained and lightly browned (Airfryer)
- 4 avocados
- 2 tomatoes, cubed
- 1 onion, chopped
- Salt (to taste)
- 1 cup cilantro, chopped
- Juice of 2 limes
For the tortas:
- 2 pounds skirt steak
- Salt and pepper (to taste)
- 3 bolillos or teleras
- 1 tbsp. mayonnaise
- 1/2 head lettuce, chopped
- 2 tomatoes, sliced
- 1/2 onion, sliced
- Oaxaca cheese, crumbled (to taste)
STEP BY STEP:
- Cut the teleras (or bolillos) in half and spread mayonnaise on each half.
- Season the meat with salt and pepper, and cook it in a pan. Once cooked, cut it into cubes and set aside.
- Slice the tomatoes, onion, and lettuce. Have the pickled chiles ready.
- Prepare the guacamole by mixing the avocados, chopped onion, chopped tomato, chopped cilantro, and the juice of two limes. Add the browned Juanita’s Hominy and mix well.
- In a frying pan, melt the Oaxaca cheese. When it begins to melt, place half of the bread on top and brown it.
- Remove the bread from the heat and assemble the tortas by adding guacamole, minced meat, lettuce, tomato, onion, chiles, and the top half of the bolillo or telera. Enjoy!
