ABOUT THIS RECIPE:
This is the arroz that will make your guests want more. The inclusion of Juanita’s Hominy provides a special texture that is made to share because it’s full of sabor. Be ready to impress with this dish!
INGREDIENTS:
- ½ cup Juanita’s Mexican Style Hominy or Juanita’s White Hominy, rinsed and drained
- ½ cup carrot, peeled and diced
- ½ cup potato, peeled and diced
- 2 tomatoes, washed
- 1 cup rice
- 1 sprig of cilantro
- 1 clove of garlic
- ¼ onion, finely chopped
- 2 cups water
- 1 cube tomato bouillon
- 1 cube chicken bouillon
- 1 tbsp. vegetable oil
STEP BY STEP:
- Rinse the rice until the water runs clear. Drain.
- Heat the vegetable oil in a pot.
- Fry the rice.
- Blend the tomato, onion, garlic, water, with the broth, and chicken bouillon.
- Once the rice is well fried, add the blended mixture from the previous step.
- Add Juanita’s Hominy, potato, and carrot, and mix everything. Add the cilantro sprig.
- Cover the pot and cook over low heat. Let the liquid evaporate and check that the rice is cooked.
- Turn off the heat. Leave the lid on and rest for 10 minutes. Remove the cilantro sprig.
- Fluff with a fork and enjoy.
SUGGESTION: Substitute the water and bouillon cubes with 2 cups chicken broth or vegetable broth.
