ABOUT THIS RECIPE:
The Pork Crackling and Juanita’s Hominy puts a fun twist on a traditional Mexican dish. Tender hominy immersed in a rich tomato sauce studded with crispy chicharrón makes for a truly authetic experience! Puro sabor!
INGREDIENTS:
- 200 grams of Juanita’s Mexican Style Hominy or Juanita’s White Hominy
- 500 grams of pork slices
- 1/2 red onion, chopped
- 1/4 white onion
- 5 garlic cloves
- 1 tsp. of cumin
- Pepper
- Salt
- 20 grams cilantro
- 2 cups of water
- 2 tbsp. butter
- 10 grams of annatto
- 1/2 red onion
- 6 chives
- 2 serrano peppers
STEP BY STEP:
- Cut the pork slices and set aside.
- To marinate the pork slices, add the red onion, white onion, garlic cloves, cumin, and pepper to the blender. Add salt, a bunch of cilantro, and a cup of water, then blend.
- Add the marinade to the pork slices and let them rest for half an hour.
- After half an hour has passed, add the pork slices to a frying pan.
- Add a cup of water and cover.
- Once the water is absorbed, reduce the heat and stir the slices until they turn golden brown.
- Remove the pork rinds and strain the butter. Reserve your chicharrón seats.
- In the same pan, add butter, annatto, red onion, chives, and serrano peppers to taste. Sauté until everything is well seasoned.
- Add a spoonful of the pork rinds and the star ingredient, Hominy, and mix well so that all the flavors are integrated.
