Hominy Scramble

This spring recipe is simple, quick to make, and doesn’t sacrifice sabor. Domingo breakfast will never be the same after you try this fresh take on scrambled eggs with Juanita’s Hominy. Provecho!

INGREDIENTS:

  • ½1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy
  • 4 eggs
  • 6 slices of ham
  • 1 cup onion, finely chopped
  • 1 Chile Serrano chopped
  • 1 red pepper chopped
  • 1 yellow pepper chopped
  • 1 tbsp. cilantro, chopped
  • 1/4 cup milk
  • 2 tbsp. butter
  • 2 cloves garlic, crushed
  • Sliced avocado
  • Salt (to taste)

STEP BY STEP:

  1. Heat a skillet with butter over medium heat. When melted, add the chopped onion, garlic, and ham.
  2. Heat and fry for 5 minutes. Add Chile Serrano, yellow and red pepper and mix.
  3. After that time, add the Hominy to the skillet and stir everything for two more minutes.
  4. Pour the milk into the skillet and mix until the hominy has absorbed it all. This may take a few minutes.
  5. Meanwhile, beat the eggs, and after completing the previous step, add them to the skillet while stirring constantly. Cook the mixture for 5 minutes.
  6. Before turning off the heat, add the chopped cilantro and mix.
  7. Serve with sliced avocado on top.
