- 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained and rinsed
- 1 tbsp. avocado oil
- 16 oz. ground beef
- 1 white onion, chopped
- 2 garlic cloves, chopped
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 1 tbsp. guajillo chile powder
- 1 tbsp. tomato bouillon
- 1 tbsp. black pepper
- 2 Yukon Gold potatoes, diced
- 2 Roma tomatoes, diced
- 1 bell pepper, diced
- 1/4 cup of water
