Hominy Mexiburger

This Hominy Mexiburger recipe is about to become your new favorite take on a veggie burger. It’s packed with protein from Juanita’s Hominy and black beans, and big flavor from fresh bell peppers, onion, and a touch of chipotle. Be ready to be wowed!

INGREDIENTS:

  • 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained
  • 1 cup bell peppers (any color), chopped
  • 1 bunch cilantro, chopped
  • 1 cup bread crumbs
  • 1 onion, chopped
  • 1 tbsp. canned chipotle chile in adobo sauce
  • 2 cans black beans, drained and rinsed
  • 2 large eggs
  • 5 tbsp. vegetable oil
  • 1 tsp. ground cumin

STEP BY STEP:

  1. In a large saucepan, heat 1 tbsp of vegetable oil and add the hominy. Fry for 2 minutes.
  2. Using a potato masher, mash 2 cups of black beans until smooth.
  3. In a large bowl, whisk together the eggs, chipotle, ground cumin, and 1 tbsp. of vegetable oil.
  4. Add the Juanita’s Hominy, mashed beans, remaining whole beans, bread crumbs, onion, bell peppers, and cilantro to the egg mixture. Blend everything together until well combined.
  5. Form the mixture into burgers about an inch thick.
  6. In a frying pan, heat the remaining oil. Place the burgers in the pan and cook for 4 minutes per side, until golden brown.
  7. Let the burgers cool slightly before serving.
