Hominy & Fish Ceviche

ABOUT THIS RECIPE:

This Hominy & Fish Ceviche is a delightful combination of marinated white fish and plump Juanita’s Hominy. Packed with bright citrus, zesty peppers, and fresh cilantro- this ceviche is sabor garantizado in every bite!

INGREDIENTS:

  • 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, rinsed and drained
  • 500 grams of raw white fish (snook), cut into cubes
  • 2 tomatoes, diced
  • 2 serrano peppers, thinly sliced
  • 1/2 red onion, chopped
  • 150 grams of cilantro, finely chopped
  • 2 cups lemon juice
  • 1 tsp. salt
  • Pepper (to taste)

STEP BY STEP:

  1. Rinse the cubed snook thoroughly and let it drain. Once drained, place it in a bowl with the lemon juice and let it marinate for 30 minutes. Add salt and pepper.
  2. Allow it to marinate while you chop the other ingredients, or for approximately 30 minutes.
  3. Transfer the marinated mixture of fish and lemon juice into a serving bowl. Add the diced tomatoes, onion, cilantro, and serrano pepper, and mix gently.
  4. Add the Juanita’s Hominy to the bowl with the other ingredients.
  5.  Check for salt and pepper.
Suggestion:

You can serve this Hominy & Fish Ceviche with tostadas.
