Hominy Ensalada de Cueritos

ABOUT THIS RECIPE:

This Hominy Ensalada de Cueritos is a vibrant and refreshing mix of hominy, cueritos, and fresh veggies, all tossed in a tangy lime dressing with a kick of chile. It’s the perfect light and flavorful dish for a hot day – grab some tortilla chips and dig in!

INGREDIENTS:

For the Salad:
  • 3 cups Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained
  • 6 cups cueritos (pickled pork skin), drained and chopped
  • 4 Roma tomatoes, chopped
  • 1 bunch cilantro, finely chopped
  • 4 jalapeños, deveined and minced
  • ½ white onion, finely chopped
  • 1 cucumber, peeled, seeded, and chopped
  • Salt, to taste
  • Black pepper, to taste
  • 1 ½ cups fresh lime juice
  • 1 tsp. ground árbol chili
  • 1 cup Clamato
For Serving:
  • Totopos (tortilla chips)

STEP BY STEP:

  1. Chop the tomatoes, cucumber (seeded), white onion, jalapeños, and cilantro.
  2. Chop the cueritos into bite-sized pieces.
  3. Drain the Juanita’s Hominy.
  4. In a large bowl, combine the hominy and cueritos.
  5. Add the chopped ingredients and mix well.
  6. Pour in the Clamato and lime juice, then season with salt and pepper to taste.
  7. Sprinkle in the ground árbol chili and stir to combine.
  8. Serve chilled with tortilla chips. Enjoy!
