Hominy Chorizo Tostadas

ABOUT THIS RECIPE:

Tostada time! These Hominy Chorizo Tostadas are the perfect quick and easy snack or light meal. Crispy tostadas piled high with flavorful chorizo, hominy, and all the best toppings – you’ll be craving these in no time!

INGREDIENTS:

  •  1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained
  • 4 corn tostadas
  • ½ cup sour cream
  • ½ cup shredded fresh cheese
  • 1 ripe avocado
  • ½ cup chopped tomato
  • ¼ cup chopped red onion
  • 1 tbsp. chopped cilantro
  • Juice of 1 lime
  • Salt and pepper, to taste
  • 1 cup chopped and fried chorizo

STEP BY STEP:

  1.  Cut the chorizo into small pieces and fry it in a pan until crispy.
  2. Add the drained Juanita’s Hominy to the pan with the chorizo and mix well.
  3. In a bowl, mash the avocado and mix it with the chopped red onion, tomato, cilantro, lime juice, salt, and pepper to make guacamole.
  4. Spread the guacamole on each tostada, then top with the chorizo and hominy mixture.
  5. Drizzle with sour cream and sprinkle with shredded fresh cheese.
  6. Serve immediately and enjoy!
