ABOUT THIS RECIPE:
Tostada time! These Hominy Chorizo Tostadas are the perfect quick and easy snack or light meal. Crispy tostadas piled high with flavorful chorizo, hominy, and all the best toppings – you’ll be craving these in no time!
INGREDIENTS:
- 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained
- 4 corn tostadas
- ½ cup sour cream
- ½ cup shredded fresh cheese
- 1 ripe avocado
- ½ cup chopped tomato
- ¼ cup chopped red onion
- 1 tbsp. chopped cilantro
- Juice of 1 lime
- Salt and pepper, to taste
- 1 cup chopped and fried chorizo
STEP BY STEP:
- Cut the chorizo into small pieces and fry it in a pan until crispy.
- Add the drained Juanita’s Hominy to the pan with the chorizo and mix well.
- In a bowl, mash the avocado and mix it with the chopped red onion, tomato, cilantro, lime juice, salt, and pepper to make guacamole.
- Spread the guacamole on each tostada, then top with the chorizo and hominy mixture.
- Drizzle with sour cream and sprinkle with shredded fresh cheese.
- Serve immediately and enjoy!
