ABOUT THIS RECIPE:
If you’re a fan of cheesy, spicy, or creamy snacks – you have to try this recipe! It offers a unique and delicious twist to the classic cheese dip by infusing the special touch of Juanita’s Hominy. It’s perfect to share with your friends and family this spring.
INGREDIENTS:
- 11 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, rinsed and drained
- 1 tbsp. butter
- ¼ red onion, diced
- 1 jalapeño pepper, diced
- ½ cup cilantro, chopped
- ½ cup sour cream
- 2 tbsp. mayonnaise
- 1 tbsp. garlic powder
- ½ tbsp. chili powder
- 1 cup Cotija cheese, crumbled
- ½ cup Colby Jack cheese, shredded
- ½ cup mild cheddar cheese
- 1 lime
- Salt and pepper (to taste)
STEP BY STEP:
- Preheat a pot and add the butter without allowing it to burn.
- Once melted, add the diced red onion and sauté.
- When the onion is translucent, add the diced jalapeño pepper.
- Add the Juanita’s Hominy.
- Add sour cream, mayonnaise and chopped cilantro.
- Mix everything over low heat.
- Add garlic powder, chili, and salt.
- Add mild cheddar cheese, shredded Colby Jack cheese, and Cotija cheese. Reserve a little of each to add at the end.
- Mix well and then add the juice of one lime.
- Remove the pot from the heat and cover with more Cotija cheese, Colby Jack cheese, and mild cheddar cheese.
- Sprinkle a little chili on top and broil for 2-3 minutes.
