ABOUT THIS RECIPE:
Calling all Vegans! This will be your new favorite spring recipe.
Enjoy Juanita’s Hominy alongside some zucchini and a side spiciness – this is a Mexican recipe that is made to share. This recipe will bring a smile to your guests (and you). Enjoy!
INGREDIENTS:
- 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, rinsed and drained
- 2 tbsp. vegetable oil
- ¼ white onion, diced
- 1 clove of garlic, minced
- 3 zucchinis, diced
- 1 serrano pepper, diced
- 3 medium tomatoes, washed and diced
- Salt and pepper (to taste)
- Cilantro for garnish and grated cheese
STEP BY STEP:
- Heat a pot, and then add the oil.
- Add the diced onion and minced garlic.
- When the onion is translucent, add the zucchini and serrano pepper.
- Cook for 5 minutes.
- Add the Juanita’s Hominy.
- Mix and cook for another 3 minutes.
- Add the diced tomato.
- Season to taste with salt and pepper.
- Continue cooking over low heat for 10 minutes and cover with a lid.
- Garnish with cilantro and grated cheese.
