Calling all Vegans! This will be your new favorite spring recipe.

Enjoy Juanita’s Hominy alongside some zucchini and a side spiciness – this is a Mexican recipe that is made to share. This recipe will bring a smile to your guests (and you). Enjoy!


  • 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, rinsed and drained
  • 2 tbsp. vegetable oil
  • ¼ white onion, diced
  • 1 clove of garlic, minced
  • 3 zucchinis, diced
  • 1 serrano pepper, diced
  • 3 medium tomatoes, washed and diced
  • Salt and pepper (to taste)
  • Cilantro for garnish and grated cheese


  1. Heat a pot, and then add the oil.
  2. Add the diced onion and minced garlic.
  3.  When the onion is translucent, add the zucchini and serrano pepper.
  4. Cook for 5 minutes.
  5. Add the Juanita’s Hominy.
  6. Mix and cook for another 3 minutes.
  7. Add the diced tomato.
  8. Season to taste with salt and pepper.
  9. Continue cooking over low heat for 10 minutes and cover with a lid.
  10. Garnish with cilantro and grated cheese.
