ABOUT THIS RECIPE:
These Hominy & Beef Sopes combines savory ground beef and Juanita’s Hominy, all piled onto sopes. Top them off with your favorite salsa, cheese, and veggies for a fiesta on a plate.
Caution: this twist on a Mexican classic will leave your guests drooling.
INGREDIENTS:
FOR THE MEAT:
- 1 1/2 cup of Juanita’s Mexican Style Hominy or Juanita’s White Hominy
- 1 jalapeño
- 1/2 onion, chopped
- 1 red bell pepper, chopped
- 16 oz. ground beef
- 1 small tomato, chopped
- 1 tbsp. chili powder
- 2 tsp. garlic powder
- 1 tsp. oregano
- 1 tsp. black pepper
- 1 1/2 tsp. cumin
- Salt (to taste)
SERVING ACCOMPANIMENT:
- 1 pack of 6-8 sopes
- Cilantro, chopped
- Lettuce, shredded
- Mexican cream
- Queso Fresco
- Salsa (to taste)
STEP BY STEP:
- Heat a medium pan over medium heat. Add the ground beef. Season the ground beef with chili powder, garlic powder, oregano, black pepper, cumin, and salt to taste.
- As the ground beef begins to cook, add the chopped jalapeño, chopped onion, chopped tomato, chopped red bell pepper, and Juanita’s Hominy. Stir and cook until the ground beef is browned and cooked through.
- In a separate pan, heat it over medium heat. Slightly fry the sopes until they are lightly golden.
- Spread some refried beans as a base on the sopes and top them with the beef mixture. Then, add shredded lettuce, cream, queso fresco, cilantro, and salsa on top.
