Hominy Tortitas a la Mexicana

ABOUT THIS RECIPE:

Enjoy @huevonalife‘s delicious Hominy Tortitas a la Mexicana bathed in a delectable sauce! A treat you won’t forget.

INGREDIENTS:

  • 25 oz. can of Juanita’s Mexican Style Hominy or Juanita’s White Hominy
  • 1/2 tomato, diced finely
  • 1/2 jalapeño, diced finely (add quantity to your preference, example: less spicy less jalapeños or none added)
  • 1/3 onion, diced finely
  • 2 eggs
  • 1-2 cups of melting cheese
  • Salt (to taste)
For the sauce:
  • 8 tomatoes
  • 1-2 jalapeños
  • 1/2 onion
  • 1 tbsp garlic
  • 2 cups water
  • Chicken and tomato bouillon (to taste)

STEP BY STEP:

  1. Blend Juanita’s Hominy or put it in the processor. Add into a bowl, with shredded cheese, small pieces of onion, tomato, and jalapeños, salt and eggs. Mix all together with hands and make into tortitas (small patty).
  2. In a pan with oil, cook the patty evenly on both sides.
  3. For the sauce, boil tomatoes, jalapeños, and onion in water. Remove water and add everything to the blender, with water, garlic, and chicken and tomato bouillon. Blend.
  4. Once the tortitas are cooked, pour salsa on top covering the patties and let it boil.

SUGGESTION: Serve on a plate with a side of white rice.
