Hominy Avocado Salad

ABOUT THIS RECIPE:

INGREDIENTS:

  • 1 1/2 cups of Juanita’s Mexican Style Hominy or Juanita’s White Hominy
  • 5 avocados, cubed
  • 2 roma tomatoes, chopped
  • 1 1/4 cups of cucumber, chopped
  • 1/2 sweet onion, chopped
  • 1/3 cup of cilantro, chopped
  • 3 large limes or 1/3 cup of lime juice
  • 1 jalapeño, chopped with seeds
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

STEP BY STEP:

  1. Get 5 ripe medium avocados and cut them into cubes.
  2. Wash and cut 2 roma tomatoes, 1 cucumber (or until you have 1 1/4 cups), 1/2 of a sweet onion, and 1 jalapeño (with seeds).
  3. In a bowl, combine the cubed avocado, Juanita’s Hominy, chopped cucumber, tomato, onion, and cilantro.
  4. Add 1/3 cup of lime juice, 1/2 tsp. salt, and 1/2 tsp. pepper to the bowl.
  5. Mix everything together.

SUGGESTION: This can be enjoyed with tortilla chips or even as a taco topping.
